Root Vegetable Sauté

Serve Root Vegetable Sauté with Citrus Roasted Chicken and a nice Cotes du Rhone for a Hiller's Home Cooking Meal Made Easy.
Preparation Time: 5 minutes. Cooking Time 20 minutes
Serves 4.

Directions

Place vegetables and broth in a suitable skillet. Cover and bring to a rapid boil, lower heat to medium and cook for 5 – 7 minutes. Remove cover and continue cooking until broth is almost evaporated.
Add oil and rosemary and continue cooking, stirring occasionally until vegetables are nicely glazed. Season with salt and pepper to taste.
Divide the vegetables among four plates and place the Citrus Roasted Chicken on top.
Spoon over any remaining pan juices and serve.

 
INGREDIENTS
  4 cups assorted root vegetables (such as celery root, carrots, small white potatoes, yams, small turnips, etc.), peeled and cut into medium 1” dice
1 cup vegetable or chicken broth
2 tbsp. extra virgin olive oil
1 tsp. chopped fresh rosemary
